Stuffed Avocados

 

These stuffed avocados are filled with healthy fats from the avocado & the mackerel has lots of Omega 3 which is great for your brain!

The mackerel is also high in calcium supporting bones along with the cucumber which is also great for bones as the K2 promotes calcium absorption.

Recipe:

  • 1 whole avocado halved & scoop out filling

  • 1/2 cup of cucumber

  • Chopped avocado from centre

  • 1/4 cup celery

  • 2 tbls Yogurt or mayonnaise

  • 1 tin of mackerel

Mix ingredients in bowl before adding to the empty avocado skins

Add chives on top & serve with lettuce/rocket

 

Ideal lunch or starter

These are a great way to boost your protein and fibre! Serve with a side salad & a tasty dressing or on their own as a starter. Guests will love these little balls of fabulousness!
