Apple & Rhubarb Crumble

This heart warming dessert is the best way to finish any meal!
Sometimes the simplest of desserts are the best and there’s nothing more heart warming than taking this out of the oven on a cold evening to share with family and friends.
Recipe:
4 apples
3 stems rhubarb
2 tbls date syrup
Crumble:
1 cup of organic oats blended into flour
4 tbls linseeds (blended)
4 tbls buckwheat flour
4 tsp ground ginger
1/2 cup butter
1/4 cup date syrup (or sugar of choice)
Toppings:
Coconut yogurt
Coconut flakes
Method:
Roast the apple and rhubarb in the oven for 10mins
Meanwhile add all the flours blended linseeds to a bowl & rub in the butter with finger tip until it resembles breadcrumbs
Stir in date syrup & ground ginger
Remove the fruit from oven and add the extra date syrup to the fruit (optional)
Add the crumble over the fruit
Bake in oven for 30-35 mins until golden brown…allow to stand and cool slightly before serving.
Enjoy with cream / yogurt and top with coconut flakes!
